Lime Pickle/Achari ya Ndimu

Lime pickle:

Lemon or lime juice
red chili powder
red or green whole chilies
curry powder or turmeric powder (or both)
red chili flakes

In a pot boil some water and turn off the stove.
Wash the limes and put them in the hot water for about 5 minutes to soften them.
Drain the water from the limes and dry them with a kitchen towel.
Cut the limes in quarters and put them in a container.
Add all the ingredients in the container with limes and cover the container.
Keep it out in the sun to ripe.
Stir the pickle every 2 days.It takes a while for it to ripe depending on how hot it is.
The amount of ingredients depends on the quantity of the pickle you want to make.
