Foldover Tuna Surprise
Foldover Tuna Surprise:
Ingredients for the batter:
4 cups flour
4 cups water
2 eggs
Salt..a little salt as the filling will have salt as well
Ground black pepper..a pinch
Mix all the ingredients to make a smooth batter.
Let the batter rest for a few minutes then cook the batter into crepes (any size you want).
Cook the crepes on low and cook them only on one side, you need the crepes to be soft not crispy.
Once all the crepes are cooked, let them cool completely.For the filling:
2 cans tuna
1 of each, red, yellow bell pepper, onion..all diced into small cubes.
2 zucchinis diced into small cubes.
Coriander
Methi leaves (optional)
1 tsp curry powder
1/4 tsp turmeric powder
1/2 tsp ground cumin powder
Salt
Lemon juice
1/4 tsp ground black pepper
2 tbsp oilMix all the ingredients and cook until there is no water left.
Let the tuna mixture cool.
Now take one crepe and place a tbsp of the tuna filling in the middle of the crepe, then fold the opposite sides, then fold the remaining opposite sides to completely seal the crepe..The crepe sides should stick to each other by themselves, if not then use toothpicks to help them stick and remember to remove the toothpicks after frying.
Now fry the tuna foldovers on a frying pan (somewhere between shallow and deep frying). Fry the foldovers until golden brown, remove them and place them on a plate with a paper towel on top to absorb any excess oil.
If you used toothpicks remember to remove them before serving.
