1 tbsp baking powder
1 cup sugar
3/4 cup finely shredded desiccated coconut (unsweetened)
1 cup coconut milk
1 and a half cups flour
In a mixer, beat the eggs, sugar and baking powder on high speed until light and fluffy.
Then add the coconut milk and continue mixing on medium speed.
Next add the shredded coconut and continue mixing on medium speed.
Then add the flour and mix well until everything thing is well mixed.
Pour the batter in a greased bundt pan or any shape pan and bake at 350 degrees for about 30 to 45 minutes or until a toothpick inserted comes out clean.
Once the cake is ready, remove it from the oven and let it cool completely.
Garnish the cake with icing sugar or even sweetened desiccated coconut.
