Carrot Rice

CARROT RICE:
Ingredients:
3 to 4 cups rice
5 onions..diced
1 and a half to 2 cups shredded carrots..I used ready made shredded carrots.
2 whole cardamom
1 cinnamon stick
Water
Salt
Oil for cooking

Method:
In a frying pan add some oil and fry the onions until golden brown, keep them aside, then fry the carrots in the same oil and keep them aside as well.
Next boil the water for the rice, add the salt, cardamom, cinnamon stick and some oil in the water.
Once the water comes to a boil, add the rice and cook until the rice is half way cooked, then drain away the water.
Now start layering the rice, in a pot, add some oil, the the rice, then some of the carrots and the onions, then the rice again and keep repeating until everything is in the pot (leave some cooked carrots and onions for decoration).

Then bake it at 350 degrees until the rice is fully cooked.
Remove the rice from the oven and serve it in a serving plate, remember to decorate the top of the rice with the carrots and onions.
Serve with any curry..
