Haluwa Method 2 (Not Oven Baked)

Ingredients:
1 cup tapioca starch
1 cup brown sugar
1 and a half cups white/regular sugar
2 cups water
2 tbsp rose water
2 tbsp sesame seeds
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
3/4 cup melted ghee
Red food colour
Yellow food colour
**Use the handle of the spoon to scoop the food colours or a big pinch..

For garnish:
Almond slithers
Sesame seeds
Pistachio

Metho
In a large deep pot add the tapioca starch, white sugar, brown sugar and mix well until there are no lumps.
Then add the cardamom, nutmeg and mix well.
In another dish, add the 2 cups of water along with both food colouring and mix well.
Now add the coloured water to the tapioca/sugar mixture and mix well.
Next add the ghee to the mixture and mix.
Place the pot with the mixture on high heat stove.
Cook, stirring constantly until you see the mixture beginning to thicken in about 5 to 8 minutes from start time..Then turn the heat to low, add the 2 tbsp of rose water, sesame seeds, almond and stir continuously..Cook on low heat for about 5 or 6 minutes and then turn the heat to high..
Keep stirring the haluwa and cook on high heat for about 5 minutes and the turn the heat to medium..
Cook on medium heat, stirring constantly for about 15 minutes and the haluwa should be ready..
Pour the haluwa in a sinia greased with ghee..I poured the haluwa into two small sinias..Garnish the top by sprinkling sesame seeds and slithered almonds. Or you can garnish with pistachios..
Serve with kahawa (black coffee)
