Swiss Rolls
Swiss Roll
Ingredients:
12 eggs
1/2 cup sugar
2 tbsp baking powder
1 to 1 and 1/4 cups flour.Method:
In a mixer add the eggs, sugar and baking powder and whip on high until the mixture has tripled or even more on size and is fluffy.
Take the bowl of mixture away from the machine and sieve the flour in, fold the flour in and do not whip.
Now take a baking sheet and line it with parchment paper, grease the parchment paper with margarine and pour 1/3 of the mixture and spread it evenly, then bake at 350 degrees for about 10 to 15 minutes but when at 10 minutes check the cake with a cake tester or tooth pick to see if it’s ready..If it’s ready then remove it from the oven and immediately fold the cake with the parchment into a log. Let the log cool for a few minutes..Mean while repeat the baking process with the remaining batter..This recipe makes 3 cake sheets, so 3 Swiss roll logs. After the few minutes wait, unfold the cake log and remove the parchment paper, then spread cream, nutella or even jam in the middle and fold the cake back into a log. If you want dust the cake log with icing sugar.Now cut the end pieces on both sides if you ant just to make the log look perfect. Then slice the cake log into thick or thin slices..Repeat the same process with the remaining cakes made..**I made 3 cake logs but depending on the baking sheets (how big or small they are) you might get more or less cake logs..
**This recipe is for my mkate wa mayai recipe, it gives out very soft and spongy Swiss rolls..Enjoy!!
