Mkate wa Nazi

Mkate Wa Nazi:
2 cups corn flour
3/4 cup shredded coconut
1/2 of a small onion..diced
1/2 tsp salt
1 tbsp sugar
1 level tsp baking powder
1 and a half cups water

Method:
Mix all the ingredients together except water.
Then add the water to the mixture at intervals mixing well at each addition.
Let the mixture rest for a few minutes.
Then place a frying pan on medium high heat and add some oil (just a little bit of oil).
Now take the mixture and mix it again. Then scoop some of the mixture with the palm of your hands and shape it to medium sized triangle. Then place it in the hot frying pan..Repeat the process with the remaining mixture..
Once the one side is cooked, turn the triangle/mkate to the other side as well..
At this point, you don,t have to fully cook the breads on the frying pan, you just need the top parts of the triangles/mikate to have a nice colour and crispy coating.
After cooking all the breads on the frying pan, take an aluminium foil sheet and individually wrap the mikate/bread.
Now you need a double boiler, take a double boiler pot, let’s call it (1), add some water to it and bring it to a boil. Now take the other part of the double boiler with holes, lets call it (2), place the foiled breads in (2) and place number(2) pot over number (1) pot and cover with lid. The boiling water in pot(1), will let steam go through the holes of pot number (2)..This steam will help cook the breads. Steam the breads for a few minutes, then you can remove one foiled bread, carefully unwrap it and check to see if it is cooked. If the breads are ready, then remove the pots from the stove and remove the foiled bread and carefully unwrap them.
Remember to add water to pot (1) if needed.
*Tips:
-To avoid this process of steaming, simply finish cooking the breads on the frying pan.
-You can make any shapes and sizes you want.
Serves 6 to 7 people.
