Veggie Rice

Veggie Rice
3 cups rice (wash and keep aside)
7 baby carrots cut into pieces
1/2 of yellow bell pepper..diced
1 onion
1/2 cup frozen peas

In a pot, add some oil and cook the onions (on medium heat stove).
Once the onions are soft, add the frozen peas, carrots and the bell pepper and continue cooking.
Next add the rice and some water (enough to cover the rice). Add some salt and continue cooking.
Cook the rice until it is half way cooked, then drain the rice.
Put the rice back in the pot and bake at 350 degrees until the rice is well cooked.
Serve as a side dish with any curry.
