Spaghetti Squash Vegeballs
1 spaghetti squash
Cut the spaghetti squash in half, then clean the seed and unwanted parts and wash it.
In a pot add some water and bring the water to a boil.
Then add the spaghetti squash to the boiling water and cook for 15 minutes.
After 15 minutes remove the squash from the pot and keep it aside.
Keep the water you will use it later..

You also need:
Different coloured bell peppers (half of each)..diced
7 baby carrots.. dices
1 onion.. diced
3 potatoes..peeled and cubed
Coriander..chopped
2 green chilies
1 zucchini..cubed
A little bit of a cauliflower..cut into small pieces
Salt
Oil
1 tomato..diced
A quarter tsp turmeric powder
A half tsp curry powder

Take the potatoes, cauliflower, carrots and put them in the boiling water you used to boil the squash and cook them for a few minutes..
In a frying pan, add some oil and cook the onion, along with the bell peppers.
Next add the tomato.
Then add some salt and ground black pepper and continue cooking.
Next, remove the carrots and the cauliflower and add them to the frying pan and continue cooking.
Then add the zucchini to the pan and continue cooking and stirring the vegetables so they don’t stick to the pan.
Then add the potatoes along with the curry powder, turmeric powder, chili flakes and the green chilies and continue cooking.
Then add the coriander..
Next take the squash and scrape the inside part (not all the way through), add the inside part of the squash to the vegetables and stir. Finally add the coriander and turn off the stove..
Now take the squash bowls and place them on a baking sheet and pour the vegetables in the squash bowls and bake them at 350 degrees for a few minutes or until all the vegetables are cooked to perfection, if you like you can add cheese on top.
When fully cooked, remove from the oven and serve them as a side dish..
