Coated Fried Chicken
Ingredients:
15 pieces of chicken (I used drumsticks)
1 cup flour
1 cup crushed cornflakes
3 eggs… For spices I used salt, ground black pepper, garlic salt, chili powder and chili flakes.
Method:
Mix the flour and breadcrumbs, then season it with ground black pepper, salt, garlic salt, crushed red chili flakes and red chili powder.
Next beat the eggs and add about 2 tbsp of milk or cream and season the eggs with salt, ground black pepper and chili powder.
Wash the chicken and dry out any excess water.
On a medium high heat, place a karai with oil in it and heat up the oil.
When the oil is hot, coat the chicken in the eggs and shake off any excess. Then dip the chicken piece that was coated with egg wash into the flour and shake off any excess flour. Then deep fry the chicken.
Repeat the process with the remaining uncooked chicken.
Cook the chicken until it is well cooked, but also remember not to overcook the chicken also, you need it juicy not dry. You can taste one cooked piece to see if it is cooked to your perfection.
*You can double coat the ingredients, meaning coat the chicken in egg wash then the flour then egg wash again then the flour again, this makes the chicken more crispy.
