Uji wa Kunde
7 cups water
2 cups sugar
2 cups coconut powder
2 cups kunde (small red beans)
2 tsp ginger powder
2 tsp ground black pepper
1 tsp ground cardamom
2 tbsp flour
Boil the beans until they get soft.
Drain the beans and keep them aside.
Mix the water with coconut powder and place it on medium heat.
Next add the spices and sugar stirring constantly.
When it comes to a boil, add the beans and let it cook.
Then in a cup add the flour with some water and mix.
Add the flour mixture into the pot of bean mixture and stir.
The flour will help in thickening the mixture.
