Mini Vitumbua

Mini vitumbua:
Ingredients:

1 heap mug rice (soak over night)
1/2 mug sugar
1/2 mug coconut powder
1 tbsp yeast
1/3 mug water
Ground cardamom

1 egg (optional)

Method:

Wash the soaked rice and place it in a blender along with all the other ingredients.
Blend until smooth and a bit grainy, then let it rise.
Once puffed up, place a Mini vitumbua frying pan on a medium heat stove and add some oil in each hole (not too much oil), then pour the mixture in each hole using a spoon or ice cream scoop. Once one side is cooked, turn them to the other side so they cook evenly. Repeat the process with the remaining mixture.
Enjoy!!

    I have 2 questions I love vitumbua but I don’t eat eggs so can you please advice how to bypass the egg. 2nd question what does a vitumbua pan look like and where do I buy from or can I use something similar.

    • You can definitely use the recipe without eggs, as I have been doing it for several times now. In fact, I’m on my way to add that the egg is optional on the recipe.
