Mtuzi wa Kuku (Chicken Curry)
Ingredients:
2 lb chicken (cut into pieces)
1 cup tomatoes (I used crushed tomatoes)
1 tbsp tomato paste
1 tbsp mixed spices (ground)
1 tsp cumin powder
1 tbsp curry powder
coriander
1 onion (diced)
3 green chilies
1 tbsp ginger/garlic paste
1/3 cup oil
Salt to taste
Method:
Place the chicken in a pot, add the onion, ginger/garlic paste, green chillies and salt.
Cook the chicken until almost tender.
Next, in another pot, heat the oil and add the 1 cup tomato and cook for a few minutes.
Next add the tomato paste and all the spices, then cook for a few minutes.
Then add the broth from the chicken and cover the pot.
Let the curry simmer and then add the chicken.
Cook the curry until the chicken is completely cooked.
Taste for salt.
Finally add the coriander and turn the heat off.
Pour the curry in a serving bowl and serve with rice or chapati.
Note:
If you want your curry to be thick, put just a small amount of broth.
