Mkate wa Maji

Ingredients:

3 cups flour
3 cups water

1 egg
1/3 cup sugar
1/4 tsp ground cardamom
Ghee for cooking

 

Method:
Add the egg, cardamom and sugar to the flour and mix.
Next add water 1 cup at a time and mix well using a whisk.
After putting all the water, mix vigorously to avoid any lumps.
On a medium heat stove, place a non stick pan and add some ghee to it.
Next take a ladle full of batter and pour it in the middle of the pan and spread around the batter using the back of the ladle making a nice round shape.
Then take some ghee and put on top of the crepe (mkate).
Next take a spatula, gently lift the sides, put the spatula under the crepe (mkate) and flip it to cook the other side.
When both sides are cooked remove the crepe (Mkate) and place it on a plate, sprinkle some sugar on the cooked mkate.
Repeat the cooking process with the remaining batter.
Serve the crepes (mikate ya maji) with tea.
