Kuku wa Kupaka
Ingredients:
2 lbs chicken
1 and a half cups crushed tomatoes
1 large onion (chopped)
a quarter cup oil
1 tsp curry powder
2 tbsp lemon juice
salt
1 cup thick coconut milk
coriander
1 tbsp crushed ginger and garlic
1 tsp chilli flakes
Method:
In a pot add the chicken with ginger, garlic, salt and a little bit of water.
Bring the pot to a boil but don’t fully cook the chicken.
In a separate pot, add the oil and place on a medium heat stove.
Add onion and cook till soft .
Add the crushed tomato and continue cooking.
Then add the curry powder, chilli flakes and lemon juice and continue cooking.
Add the chicken without the broth from the chicken.
Remember the chicken is not fully cooked, at this point, if desired, add a little bit of the broth to finish cooking the chicken, but keep in mind you need a thick sauce.
Finally add the coconut milk and turn the stove to low.
Continue cooking for a few minutes then turn off the stove.
Now add the coriander.
Serve with rice ,naan , chapati, mkate wa ufuta or mahambri.
