Egg and Cheese Quesadillas


2 eggs
1/4 diced green bell pepper
1/2 chopped onion
Ground black pepper
6 to 8 tortilla bread
Some oil for cooking
1/2 cup grated cheese


Beat the eggs and add all the ingredients except oil and tortilla bread.
Next place a large frying pan that fits the bread on a medium heat stove, add a sprinkle of oil and add one bread.
Warm the bread on one side and then turn to other side and add some of the beaten eggs with vegetable and spread it around with a spoon and then sprinkle some cheese.
Next top up with another tortilla bread to cover.
Carefully turn the breads on the other side.
Press on the breads a few times to help the eggs cook.
If you find the heat is too much, reduce it but make sure it’s not too low or your quesadilla won’t be crispy and at the same time you want your eggs to cook, so keep an eye on the heat.
You can peek in between the breads to see if the eggs are cooked.
When the eggs are cooked, remove from heat and cut into pieces.
Repeat with the remaining eggs and tortillas.
