Zucchini and Potatoes
red bell pepper
green bell pepper
yellow bell pepper
4 tbsp oil
onion salt (optional)
garlic salt (optional)
1/2 tsp curry powder
In a deep frying pan, add oil and place on a medium high stove.
Dice the vegetables separately.Start frying the potatoes.
Remove when ready and keep aside.
Next fry the bell peppers and keep aside.
Then fry the zucchini and keep aside.
In another pan add a little bit of oil and fry the onion.
Next add the vegetables, green chilies, onion salt, garlic salt, curry powder, salt and coriander.
Cook for a few minutes and remove from heat.
Serve with rice or chapati.
