Oven Roasted Vegetables

Ingredients:

I used 2 types of squash
Carrots
Sweet potatoes
Cauliflower
Broccoli
Olive oil
Ground black pepper
Garlic..3 pieces peeled (optional)
Salt
Red crushed chili pepper

 

Method:
Cut the vegetables and clean them by removing the seeds, stems and whatever unwanted parts you want to remove. I left the skin on all vegetables.
In a large pot, add some water and bring it to a boil.
Once the water comes to a boil, add the vegetables in.
Start adding the ones that takes time to be soft, remember, you don’t want to cook them at this point. When the vegetables start to get a bit soft, remove them and keep them aside, next in the same water, add the other vegetables and keep doing this until all the vegetables are done (at this stage you are only pre-cooking the vegetables).
Preheat your oven on to 450 degrees.
In a baking sheet sprinkle some olive oil and add the precooked vegetables, then sprinkle some salt,ground black pepper and red chili pepper flakes.
Also add the cloves of garlic and sprinkle some more olive oil over the top of the vegetables.
Bake the vegetables until they are soft and remember to keep an eye on them as the oven is on high, you don’t want the vegetables to burn.
The vegetables are done when they are soft.
