Fried Rice w/Sautéed Mushrooms And Scrambled Eggs

Ingredients:

2 cups rice
1 onion
1 cup frozen mixed vegetables
1 cup frozen corn kernels
3 tbsp soya sauce
1 tsp curry powder
1 tsp garlic powder
Oil for frying
Salt to taste
3 to 4 cups water

Topping:
3 Scrambled eggs
Saute’ed mushrooms

 

Method:
Wash your rice and keep aside.
On a medium heat stove, place a pot and add oil.
When the oil is hot, add the onion and saute’e the onion.
Next add the frozen vegetables, curry powder, garlic powder and soya sauce.
Add the water and salt.
Bring it to boil.
After boiling, add the rice and taste for salt.
Let it boil while stirring until the rice is almost cooked and the water has disappeared.If you feel like the rice still needs more water, you can always add some more
Place the rice in the oven and bake at 350 degrees for about 30 minutes or until the rice is fully cooked.
Remove from the oven and serve it in a big plate.
Top with saute’ed mushrooms and scrambled eggs.
