2 lbs beef (cubed)
1 tbsp yoghurt
1 tbsp tomato paste
1 tbsp ginger/garlic paste
1 tsp ground mixed spices
1 tsp ground cumin
1 tsp curry powder
1/2 cup vegetable oil
Salt to taste
1/4 tsp ground black pepper
1/4 tsp crushed red chilli flakes
In a pot add all the ingredients including the meat.
Add water to the pot until half way full.
Boil the meat until it’s soft and tender, and the liquid has reduced.Stirring the meat occasionally while it’s cooking will help it from sticking to the pot.
After the liquid has reduced, pour the meat in a plate and let it completely cool.
Other ingredients are:
Different coloured bell peppers (cubed)
1 onion (cubed)
Oil for frying
Beat the eggs and place them in a wide plate.
Turn on the stove and place a frying pan on top (remember you need a wide frying pan so the skewers can fit in).
After the frying pan has heated up, add the oil.
Next dip the skewers in the eggs and coat the meat and vegetables with the eggs.
Then place the beef/veg skewers (coated with eggs) in the frying pan.
Repeat with the remaining skewers, dipping them in eggs and frying them.
Remember to turn the skewers when frying them so that they can evenly cook.
There are two ways of finishing this off…
One way is to keep frying them until they are fully cooked or…
The second way is to not fully cook them on the stove top and finish them off in the oven.
Either way they taste great.
Serve them with lemon wedges or ukwaju (tamarind sauce).
