Beef Biryani (Original)
Step 1
Ingredients:
2 lbs meat
1 tbsp garlic and ginger paste
Salt to taste
Water (enough to boil the meat)
Method:
In a pot add all the ingredients and bring to boil.
Cook until the meat is almost tender.
Remove and keep aside.
Step 2
Ingredients:
4 medium potatoes (peeled, washed and cut into halves)
3 large onions (diced)
Some yellow food coloring mixed into 1 cup water.
Method:
Put the potatoes in the water with food coloring in and leave them in.
Place a frying vessel on a medium high stove.
Add oil in the vessel.
When the oil is hot add the onions and fry until they are crisp and golden brown.
Remove and keep aside.
Next fry the potatoes without the water.
Turn the potatoes so they cook all around.
At this point the potatoes don’t need to be tender, as you will cook them again in the curry.
When the potatoes are crisp, remove and put them aside along with the onions.
Keep the water with the coloring aside for later use.
Step 3
Ingredients:
1 can crushed tomatoes
1 small can tomato paste
5 tbsp oil (you can use the same oil you used for frying onions and potatoes)
2 tbsp ground mixed spices
Salt to taste
Method:
Place a pot on a medium high heat stove.
Add the oil to the pot.
When the oil is hot add the tomatoes both crushed and paste.
Cook for a few minutes, then add the spices and continue cooking.
Next add the meat and gently stir.
Turn the heat to low and add the potatoes and the onions.
Taste for salt and spices.
You can also add a few tablespoons of oil to help the curry cook and not stick too much.
Cover and cook on low heat, until everything is cooked.
Step 4
Ingredients:
4 cups rice
Salt to taste
3 tbsp oil
Water
Method:
On a high heat stove, place a pot and fill with water until three quarters full.
Add oil and salt and bring to boil.At this point wash the rice and keep aside.
When the water is boiling, add the rice and cook.
Check for salt and add more if needed.
Cook until the rice is more than halfway cooked.
Place a colander or strainer in a sink and strain the rice when it is more than half way cooked.
Remove all the water.
Next take the same pot or bigger pot and place half or a third of the rice next add some oil left over from frying the onions.
Next sprinkle some water with the yellow coloring.
Next add another layer of rice and repeat with the oil and water with the food coloring.
When all the rice is done, bake in the oven for about 30 to 40 minutes or until the rice is cooked.
Remove from heat and serve with the curry you made.
** While cooking the rice, remember to keep checking on the curry.
**You can always add or reduce the ingredients.
For the mixed spices
* 3 tbsp whole cumin
* 1 tbsp black pepper
* 5 cloves
* 10 cardamom
* 3 or 4 stick cinnamon
Place these spices in a frying pan and toast them on a low medium heat, as soon as you start smelling them, remove from heat.
Let them cool and grind them.
The recipe called for 2 tbsp mixed spices, if you have some left, store it in an air tight dry container for later use.
This is just a guidance, you can use more or less of the spices to suit your taste.
