Spicy Chicken n Carrot Rice
3 cups rice..washed and drained
4 tbsp tomato paste
1 cup grated carrot
1/4 cup oil
1/4 cup ghee
1 whole chicken cut into 4 pieces
In a pot, add the oil and ghee and cook the onion until soft.
Next add the tomatoes and the spices and continue cooking.
Now add the tomato paste and mix well then immediately add the chicken and cook.
Make sure to stir so the chicken doesn’t stick.
Then add a little bit of water so that the chicken doesn’t stick, if the chicken gave out liquid then do not add any water.
Once the outside of the chicken have started turning colour then remove the pot from the stove.
Now take a baking pan, add the chicken pieces without any liquid. Brush the chicken with some sauce from the pot the the chicken was cooking and bake the chicken until well cooked.
Now take the pot with what is left from cooking the chicken (it should be a thick sauce). Add water and coriander to the sauce and cook the rice until half way cooked and the water has completely reduced. Next add the carrots and mix gently. Cover the pot with oven safe pot cover and bake the rice in the oven until well done.
Once the chicken and the rice is done, remove from the oven and serve them together.
