Mikate ya Mboga
Mikate ya Mboga (Veggie Breads)
3 cups flour
1 and a half cups water
1 tsp baking powder
3 tbsp coconut milk powder
Ground black pepper
Mix well all these ingredients for a few minutes and keep aside to rest.
While the batter is resting prepare these ingredients:
1 red bell pepper..chopped
2 green onions..diced
Green chillies..chopped (optional)
Place the vegetables into the batter and mix well.
Use arepa maker to cook the breads, making sure both sides are cooked.
You can use a frying pan that has been lightly oiled to cook these but make sure both side are well cooked.
Serve them warm or at room temperature.
Serve them as a snack or a side dish to any kind of curry.
