Oven Roasted Turkey:
Total cooking time: 4 hours
1 whole turkey (halal)..4.25 kg
For the Dry Rub:
1 tsp salt
1 tsp turmeric powder
1 tsp paprika
1 tbsp chicken seasoning
1 tbsp steak seasoning
1 packet maggi chicken seasoning
Mix the dry rub ingredients together
5 tbsp ginger/garlic paste
225 gm cold butter
1/2 cup olive oil
Wash and pat dry the turkey.
Cut the cold butter into somewhat thick strips.
Coat the butter strips with some of the dry rub mixture.
Put the coated butter strips under the skin of the turkey, throughout the whole turkey.
Rub the dry rub mixture around the whole turkey and inside the turkey as well.
Rub the ginger/garlic paste over the turkey, so it mixes well with the dry rub.
Marinate the turkey overnight.
Preheat the oven to 450 degrees.
Brush the turkey with some of the olive oil.
Place the turkey uncovered in a roasting pan and place the pan in the oven.
Bake for 30 minutes.
Remove the turkey and baste it using the drippings from the turkey and some olive oil.
Now cover the turkey with aluminium foil and return the pan in the oven.
Reduce the heat to 350 degrees and continue to bake, basting and covering the turkey every 30 minutes.
After 2 hours of baking, drain 3/4 of the turkey drippings and save it for gravy.
Place the turkey back in the oven still covered and continue to bake for 1 hour, basting every 30 minutes.
Next remove the aluminium foil and bake the turkey uncovered for 30 minutes, making the cooking time a total of 4 hours.
Remove the turkey from the oven and let it rest before serving.
