For the sauce:
4 diced onions
5 peeled and diced potatoes
2 cups blended tomatoes
2 tbsp ground mixed spices
2 tsp tomato paste
3 tbsp yoghurt
Shrimp (any amount you want)..peeled
In a frying pan, add the oil and fry the onions until golden brown, then fry the diced potatoes until they form a crust.
Keep the onions and the potatoes aside.
In a pot, add some oil and cook the blended tomatoes.
Then add the tomato paste and the mixed spices, mix well.
Next add the yoghurt, mix well and continue cooking.
Now add some salt and the shrimp, mix well.
Cook a minute or two and keep the curry aside. The shrimp doesn’t have to be fully cooked at this point.
For the Rice:
7 mugs rice..washed
In a pot, put some water and add some salt, a little oil and bring to a boil.
Once the water comes to a boil, add the rice and cook until it is half way done.
Drain the water away.
You also need:
Yellow food colour
In a big pot, place the shrimp curry then add half of the cooked rice.
Now add the yellow food colour, coriander, the fried onions, fried potatoes, and cover with the remaining rice.
Also add some yellow colour and some oil on the top layer of the rice. Cover the pot and bake it in the oven until the rice is well cooked.
Serve it with pickles.
