Avocado & Shrimp Salad
AVOCADO N SHRIMP SALAD:
You need cooked shrimp
Cooked corn kernels
About 2 tbsp cooking oil
Red chili flakes
In a pan mix all these ingredients and cook until there is no liquid left.
Let the mixture cool.
Now you also need an avocado, cut the avocado int two, remove the seed and dice the flesh of the avocado.
Gently scoop out the diced flesh of the avocado and place it in a bowl.
Discard the seed of the avocado but leave the skin as will use it as a serving bowl.
Now add the shrimp/corn mixture into the avocado and gently mix. Add chopped coriander and mix it into the salad.
Serve it chilled or at room temperature.
You can squeeze some lemon juice before serving and garnish with more chopped coriander.
