Creamy Tomato n Pea Soup
Creamy Tomato n Pea Soup:
3 large tomatoes
2 cups water
Dice the tomatoes, put them in a pot with the water and
boil them until they are soft and there is little water left.
In a food processor, add the cooked tomatoes with the remaining liquid
and blend into a smooth mixture.
You also need:
1 large onion..diced
1 cup frozen peas
1 cup coconut milk
1/4 tsp curry powder
1/2 tsp cumin powder
Salt n lemon juice
1/4 tsp crushed chili flakes
1/3 cup oil
In a pot, add the oil and cook the onions until soft.
Next add the spices and mix well.
Now add the tomato mixture and mix well.
Continue cooking for a few minutes then add the frozen peas.
Mix well and taste for salt, then add the lemon juice, half the coriander
and continue cooking.
Now add the coconut milk and let the soup cook until the peas are cooked and
there is enough liquid that you desire.
Now add the remaining coriander.
Serve the soup with toasted pita bread, with rice or even with chapati.
