3 cups flour
1/2 tsp baking powder
1 tbsp sugar
1/4 tsp ground black pepper
1 tbsp yoghurt
1 tbsp margarine
1 tsp ghee
1 cup and 1 tbsp water
Mix all the ingredients except water.
Then add the water in parts to make a soft dough.
Let the dough rest for at least 1 hour.
For the potato stuffing:
10 boiled potatoes, peeled and mashed
Chopped green onions
In a frying pan, add the oil and all these spices, herb and green onion.
Cook until they start to dry up then pour them in the mashed potatoes and mix well.
How to make the stuffed potato chapatis..
Divide the dough into 8 balls.
Take each ball and roll it out into a somewhat thin circle.
Then stuff one end of the circle with about 2 tbsp of the mashed potatoes. Try to avoid stuffing the ends.
Now fold over the unstuffed part of the circle to cover the stuffed part, making a semi circle.
Repeat this process with all the balls.
Now cook the stuffed chapatis like regular chapati but avoid pressing them.
I served mine with lime pickle, mango pickle and the remaining mashed potato stuffing.
