Fruit and Nut Cake
Fruit n Nut cake
1 and a half cups flour
1/2 cup sugar
113 gm butter
1/4 cup milk
1 tsp baking powder
1 tsp vanilla
1/2 cup raisins
1 cup mixed tutti fruit
1 cup ground almond
1/4 cup almond slithers
2 tbsp oil
1/4 tsp salt
Preheat the oven to 350 degrees
Mix flour, ground almond, baking powder, lemon zest and salt.
In a mixer, beat the butter until soft then add sugar and continue mixing.
Then add one egg at a time, mixing well after each addition.
Now add vanilla and continue mixing.
Add half of the flour mixture and continue mixing.
Next add the 1/4 cup of milk and continue mixing.
Now add the fruits and mix at low speed.
Next add the remaining flour and mix well.
Now add the 2 tbsp of oil and continue to mix well.
Pour the batter in a greased cake loaf pan. Depending on the pan size, you can get 2 or 3 cake loaves out of this recipe.
Now sprinkle the almond slithers over the batter and gently dip them into the batter.
Place the pans in the oven and bake for about 60 minutes on middle rack.
Let the cake cool completely before cutting it.
