7 cups light coconut milk
3/4 cup heavy coconut milk
2 cups rice
3/4 cup red lentils
In a pot, boil the 7 cups of coconut milk.
Add some salt to the coconut milk.
Mix the rice with the lentils and wash together.
Once the coconut milk comes to a boil, add the rice mixed with the lentils and continue cooking.
When the rice is half way cooked, drain the rice.
Now put the rice back in the pot and add the heavy coconut milk and cook on low until the heavy coconut milk has evaporated..
Then bake the rice in the oven at 350 degrees until the rice is fully cooked.
Remove from the oven and serve hot with any curry.
Serves 4 to 5 people.
