3 cups rice..Wash and drain away the water.
2 small onions..diced
1 large tomato..diced
1 zucchini..diced into medium size pieces
1/2 of red and yellow bell pepper
1/2 tsp ground cumin
1/2 tsp curry powder
1/2 tsp garlic powder (optional)
Oil for cooking
You also need two handfuls of COOKED kababs, you can use any kababs, store bought or home made as long as they are cooked.Method:
In a pot, add the oil and place the pot on a medium high heat stove.
Next add the onions and cook for a few minutes.
Then add the tomato and continue cooking for a minute or two.
Next add the cumin powder, garlic powder and curry powder.
Then add water and salt.
Once the water comes to a boil, add the rice and cook until the rice is a bit over half way cooked, then drain the water away from the rice.
Now start layering the rice, add some rice to the same pot, then coriander, then zucchini, then a few kababs and repeat this process until all the rice is in the pot.
Bake at 350 degrees until the rice is fully cooked.
Then serve with a side dish of fried potatoes or any vegetable curry.
Garnish the rice with chopped coriander.
