1/2 of a green cabbage
1/4 of a purple cabbage
A handful or two of shredded carrot
A pinch of salt
A pinch of ground black pepper
1 tbsp lemon juice
Wash the vegetables and then dry them thoroughly.
Shred the cabbages in a food processor..Or you can use a grater to grate the cabbages.
Then put the cabbages in a large dish and add the shredded carrots.
Next add the remaining ingredients, add the mayonnaise to suit your taste and mix well.
I prefer to make the coleslaw right before serving it, as I find the vegetables give out water, when mixed earlier thus making the salad a bit watery..
