Chicken Coconut Curry
Chicken Coconut Curry:
1 and a half lbs chicken pieces
Cook the chicken in some water, ginger/garlic paste and salt.
Cook until the chicken is almost tender, then keep the chicken aside.
You also need:
1/4 tsp turmeric powder
1/2 tsp curry powder
1/2 tsp garlic powder
Heavy coconut milk
1/4 tsp red chili flakes
1 or 2 bay leaves
2 green chilies
In a pot, heat up the oil and cook the tomatoes until soft, then add the remaining ingredients except the chicken, coriander and coconut milk.
Cook until everything is well mixed and cooked, then add the cooked chicken without the broth, cook for a few minutes then add the coconut milk and cook on low.
Taste for salt and lemon.
Then add half of the coriander.
When the curry is ready, garnish with the remaining coriander.
Serve with breads or rice.
