Somali Anjeera:- Recipe by: Farhia Qureshi
2 cups wheat Flour
¾ cups Maize Flour
2 teaspoon instant yeast
A pinch of salt to taste.
Mix the all the ingredients with water until you get the right consistency. Put it aside for some hours or until the batter has risen, preferably overnight.
Then you just cook like( pancakes but on one side) , cover it with a lid you will know its ready when the underside is lightly browned and the top is bubbly. Remove it from the pan.
Then you can apply a little bit of ghee , butter or oil on the top side and sprinkle sugar on it, or eat it the way
it is with stew.
