Butternut Squash in Coconut Sauce
Butter nut squash in coconut milk
Thick coconut milk
Cut and clean the inside of squash, remove all the seeds and discard them.
Next wash and cut the squash into pieces.
Place the squash in a pot and cover with coconut milk.
Then add sugar and ground cardamom.
Cook until the squash is soft and the coconut milk has reduced to almost a 1/3.
Remove from the stove.
Now take the thick coconut milk and cook it until it becomes heavier and pour it over the squash.
Serve warm or cold.
You can use pumpkin instead of the squash.
