Peri Peri Chicken
For the sauce:
1 big red bell pepper
1/4 tsp red food colour powder
1/4 tsp orange food colour powder
3 big red chili peppers
1 tsp chili powder
1 tbsp hot sauce ( I used Srirachi Chinese hot sauce)
1 tbsp ketchup
1/3 cup oil
1/4 cup lemon juice
1/4 cup vinegar
1 tsp salt
Put all these ingredients in a blender and mix roughly.
Then pour the mixture in a pot and cook until it starts to thicken, about 10 minutes or so.
Then let the mixture cool and blend it until smooth.
I used about 2 lbs chicken pieces. Marinate your chicken with the sauce mixture and bake the chicken until well done.
